I'm not an obsessive salad-eater... but when I do eat salad, I like to make 'em tasty beyond belief. Here's one of my favorite healthy go-to salad recipes :)
Lettuce (any kind but that flavorless, boring iceburg)
A handful of strawberries
A handful of shredded coconut
1 fresh pear - shopped into thin matchstick slices
A sprinkle of blue cheese
Top with red wine vinagrette
It is seriously the easiest and most delicious salad I've ever had - and I'm proud to call it my own creation :)
